Borscht... the perfect fall food!

This is an extremely simple recipe, but it tastes soooo good!  And it's loaded with fresh vegetables, so it is also very good for you!

You will need:
2 lbs Red Beets
1 Walla Walla Onion
1 lb Super Sweet Carrots
2 lbs Sieglinde Potatoes
2 cloves minced garlic
1 cup chopped fern dill

2 litres chicken stock
1 small can tomato paste
1 cup vinegar
5 Bay leaves


Directions:
1. Chop all vegetables (except dill) and put in a LARGE soup pot. 
2. Add in chicken stock and boil until vegetables are fully cooked.
3. Add tomato paste, vinegar, bay leaves and dill, and simmer for 30 minutes.
4. Ladle into bowls, and ENJOY!!!!

Makes 6-8 litres of soup, which can be frozen for future dinners...


We always enjoy our borscht with a dollop of sour cream on top!
