Roasted Radishes

Roasted radishes are a delicious alternative to potatoes at the dinner table. They offer a mild and fresh flavour, and are lower in carbohydrates than our usual favourite, starchy alternatives.

This recipe is simple and quick, and can be easily customized to your liking. The basic principle is to cook them long enough to brown them a bit… the fixings on top are up to you!

Recipe:

  1. Get your nice big bundles of Zelaney Farms freshly harvested and pre-washed radishes at our farm or the farmers market.

  2. “Top and Tail” them… trim off the root tails and the greens

  3. Slice them in half, or in quarters when they’re really big ones.

  4. Toss them in 1-2 tbsp olive oil, and some salt and pepper
We love to add local garlic powder and a bit of lemon pepper. Feel free to add other spices if you like… try using fresh dill, or minced garlic and parsley. Or you could spice it up with some chilli powder!

  5. Place on a baking sheet or in a roasting pan, cut side down. Roast at 450°F for 10-14 minutes.

  6. Remove from the oven when they’ve started to brown nicely, while still a little firm in the centre.

  7. Sprinkle with salt to taste, and enjoy them while they’re hot!
